Then carefully remove the ham hock but leave the pan over the heat.

Green pea soup with ham hock. Remove and discard the ham skin, bones and fat. Rinse split peas under cold water until water runs clear. Add the cream and bring to a simmer.

Add ham hock and stock and bring to the boil then reduce heat to low. Add lentils and cook, stirring for 1 minute. Bring to the boil over high heat.

Now add salt and pepper as needed. For the soup, heat a large pan until hot, add the butter, peas and parsley then stir in 750ml/1¼ pint of the cooking liquor from the ham hock. Add all the remaining ingredients except the salt and pepper.

Cover pot so that lid is ajar and steam can escape. Add ham hock and pour the stock (or water and stock cubes/powder/vegemite) over and bring to a simmer. Dice or shred the meat and return to the pot.

Add the onions, carrots and celery and saute till tender. Cover with a lid and allow soup to simmer for 2 hours.
