Sprinkle the balsamic vinegar, tomato paste, and water around the roast.

Balsamic slow cooker roast. Cover the slow cooker, set to high, and cook until the meat is tender, about 6 hours. Brown the roast on both sides and then add to the slow cooker. Place roast in pan and sear on all sides.

Add broth, vinegar, maple syrup, soy sauce, garlic, thyme, pepper and bay leaves into slow cooker and stir place roast into. Remove from saucepan and place in a slow cooker sprayed with nonstick cooking spray. Pour the balsamic vinegar over the pot roast and sprinkle the seasonings evenly over the meat.

Season roast with salt and pepper, to taste. Place the beef roast in the bottom of the slow cooker. Sprinkle the roast with the salt and pepper.

In a medium sized mixing bowl combine balsamic vinegar, olive oil, beef broth, dijon mustard, brown sugar, oregano, thyme, basil and nutmeg; Place slow cooker liner into slow cooker vessel if using.
